Spinach Pesto Grilled Cheese Sandwich
(makes 1 sandwich)

Ingredients:

3 tablespoons spinach (aka spanakopita) pesto
1/4 cup graviera or gruyere (grated)
2 slices bread
1 tablespoon butter

Directions:
1. Assemble sandwich and grill until the cheese has melted and the bread is golden brown on both sides, about 2-4 minutes per side.
